A European immigrant first introduced to the United States as a pot-herb, LAMB'S QUARTERS have a long history of use as a salad and cooking green. Use this weed/green/herb as you would baby spinach...in place of lettuce on sandwiches, as the main ingredient in a quiche, in a Endive, LAMB'S QUARTERS and Orange Salad, in a Warm Lentil and LAMB'S QUARTERS Salad with Feta Cheese or saute LAMB'S QUARTERS with shiitake mushrooms and toss with penne pasta.
