  Hedgehog Mushroom
These mushrooms do not have gills, but they do have teeth or at least small, tooth-like projections on the under-side of their caps. Also known as Sweet Tooth mushrooms, they can be found in the wilds along the Pacific Coast in winter; some growing on trees as shelves, others on the ground in colors so vibrant they can be used to dye wool. These fleshy, buff-colored delicacies have often been compared to the Chanterelle in flavor. This is a chewy mushroom -- great sautéed and scattered over steaks and chops. They are also a perfect ingredient in cooking sauces and casseroles where they'll add a wild and woodsy flavor. The fresher and blonder, the better the flavor. Now in season, you can use Hedgehogs as a substitute for Chanterelles.
