We love these little chokes! The offshoots of an Artichoke variety developed here in Southern California, BABY PURPLE ARTICHOKES have a more intense, nuttier flavor than their Green Globe cousins. They also cook faster. Our farmer developed this variety, Fiesole, in 2004 from traditional European varieties such as French 'Violet de Provence' and Italian cousins in Sicily, Tuscany, and Venice, like 'Violetto di Toscana'. Along with cooking BABY PURPLE ARTICHOKES, our farmer suggests trimming these little babies, cutting them in quarters and serving them raw with bagna cauda.

Description:
FIDDLEHEAD FERNS are the young green shoots of any variety fern, but the commercially available variety is usually Ostrich fern. If you are unsure of the origin of their name, refer to the top of the nearest violin (or fiddle, depending on your neighborhood). Treated as a spring vegetable, fiddlehead ferns have a flavor reminiscent of artichokes, asparagus and green beans with the barest hint of mushrooms, and are at their best when treated simply. Trim the tail of each shoot to within a 1/4 inch of the coil, and steam them until fully cooked. Undercooked fiddlehead ferns do not fully develop their complex flavor. At certain times of year, the shoots come in quite fuzzy and the fuzz should be removed by gentle rubbing. Rinse well and blot dry. Their flavor profiles are similar, so treat fiddlehead ferns as you would artichokes or asparagus. Because they are so charming and unusual in appearance, serve steamed fiddlehead ferns as a first course, graced with clarified butter and lemon zest or drizzled with a less than assertive vinaigrette. Or garnish small game birds or soups. Or serve as a lovely side dish lightly dressed with Hollandaise.

A discerning bunch, the pharaohs forbade mere mortals to consume MORELS. Today's chefs revere MOREL MUSHROOMS for their rich earthy quality. They may be tan, yellow or black in color, have short, thick, hollow stems and sponge-like, webbed pointed caps. Their honeycombed tops are hollow and perfect for stuffing... Wild GREENGAGE PLUMS were probably introduced to Britain by the Romans, but disappeared from cultivation until Sir Thomas Gage brought them from France in the eighteenth century (and gave them his name). In France, they are known as Reine-Claude after the wife of Francios I, who adored their sweet flavor. These small members of the plum family have green skin, sometimes tinged with yellow or rose pink, which turn golden as the fruit ripens. There are many varieties of GREENGAGE; all have firm flesh and a delicious honeyed flavor. "Transparent" GAGES have fine, translucent flesh; if you hold the fruit up to the light, you can clearly see the shadow of the pit. These GOLDEN GAGES have a particularly sweet flavor. Fans of FAVA BEANS don't seem to mind the work it takes to prepare them. They laud the bean's distinctive flavor and creamy texture. How much work? you ask. Well, in addition to having to strip them from their sleeping bag of a pod, you must also remove the tender beans from the pale green, bitter skin enclosing them. To do so, strip the beans from the pod. Plunge them into boiling water for one minute, drain, and let cool. Pierce the smooth top of the shell with your thumbnail and squeeze out the bean inside. Skinned favas are a brilliant spring green. They can stand on their own as a side dish, or you may add them to vegetable stews and pasta dishes. One pound of pods yields only about ½ cup of beans. They go well with olive oil, yogurt, rosemary, dill, parsley and thyme.

Some of America's most respected chefs have extolled the virtues of GREEN GARLIC. We're all used to seeing common garlic which is the dried mature bulb of the garlic plant. Green garlic is the same plant pulled from the ground at a much earlier stage, before the bulb forms. Green garlic looks like a really big green onion with leek-like tops. According the Alice Waters' Chez Panisse Cooking, "The quality of green garlic is unique and of great use in the kitchen. When cooked, it has none of the hot, pungent qualities of fresh garlic cloves. Its flavor, although unmistakably associated with the mature form, is much milder...The rich, earthy aroma of green garlic has inspired numerous dishes. Garlic consumme is a stew of green garlic, leeks, and ripe tomatoes to which we add a rich poultry or lamb broth...The flavor of green garlic is most clearly captured in a pureed soup made with new potatoes and finished with cream. Without the potatoes, the pureed and creamed garlic, seasoned with vinegar and salt and pepper, can serve as a sauce, or sauce element, and is good with grilled pigeon, roast chicken, and veal. It is the consensus of Florida horticulturists that the MURCOTT MANDARIN variety is a tangor of unknown origin resulting from the breeding program of the U.S. Department of Agriculture. According to Robert Willard Hodgson in Horticultural Varieties of Citrus, "The oldest known budded tree, from which the present commercial acreage largely if not entirely traces, still remains on the place formerly owned by a nurseryman, Charles Murcott Smith, in Bayview, Clearwater, Florida, and is thought to have been budded about 1922" (Ziegler and Wolfe, 1961). Under the name Honey Murcott, small-scale commercial propagation was undertaken in 1928. During the past decade, Murcott has been planted rather extensively in Florida. Typical of "common mandarins", Murcotts have thin rind, rather tightly adherent and not readily peelable. The rind surface is smooth to slightly pebbled and the color is yellowish-orange at maturity. The Murcott has a few seeds but because of its rich flavor and deep orange-colored flesh and juice, Murcott is a favorite with gift fruit packers.

PAGE MANDARINS are a medium size citrus fruit, with medium-thin, leathery rind that is moderately adherent but easily peelable. Their skins' surface is smooth to moderately pebbled, and their color is reddish-orange at maturity. The Page's flesh is deep orange, tender and juicy, and the flavor rich and sweet (this variety is considered one of the very best...especially for juice). Seeds are moderately numerous and cotyledons pale yellow to almost white. This early ripening, high quality variety, the fruit of which has considerable resemblance to a sweet orange, originated from a Minneola tangelo X Clementine mandarin cross made by Gardner and Bellows of the U.S. Department of Agriculture in 1942. The Page mandarin was described and released in 1963 by P. C. Reece and F. E. Gardner at the U.S. Horticultural Field Station, Orlando, Florida. While officially released as an orange, technically speaking this variety should probably be referred to the tangelo hybrid group, since its parentage is three-fourths mandarin and one-fourth grapefruit.

Also known as Sweet Tooth mushrooms, they can be found in the wilds along the Pacific Coast in winter; some growing on trees as shelves, others on the ground in colors so vibrant they can be used to dye wool. These fleshy, buff-colored delicacies have often been compared to the Chanterelle in flavor. This is a chewy mushroom -- great sautéed and scattered over steaks and chops. They are also a perfect ingredient in cooking sauces and casseroles where they'll add a wild and woodsy flavor. The fresher and blonder, the better the flavor. Now in season, you can use Hedgehogs as a substitute for Chanterelles.

Botanists believe the MEYER LEMON is a hybrid, a cross between a regular lemon and either an orange or a mandarin. They're sometimes smaller than a regular lemon, rounder in shape, with a thin, soft, and smooth rind which ranges from greenish when slightly immature to a rich yellow-orange when fully ripe. The rind lacks the typical lemon peel oil aroma and the pulp is darker yellow and less acidic than a regular lemon. The complex flavor and aroma hints of sweet lime, lemon and mandarin and a lingering essence of lavender. Like most citrus, Meyer lemons originated in China where they have been grown for at least several hundred years. Frank Meyer, a plant explorer for the U.S. Department of Agriculture, found them growing near Peking and introduced them to the U.S. in 1908. Today, most are grown in California's Central Valley, south of Fresno and in the Sacramento Valley. A few growers in northern San Diego County sell mainly to organic and farmers' markets. They're also grown in Texas and Florida. Peak season in most areas is November, December, and January, but can extend to April.

Also known as Japanese artichokes, Chinese artichokes, knotroot and Chorogi, CROSNES are an heirloom member of the mint family. But there's no familial resemblence. First cultivated in France outside Paris, near Crosne, these unusually shaped edible tubers were very popular in Europe from their introduction in the 1880s until the 1920s. CROSNES are still cultivated in Europe but we now have California-grown Crosnes! Chefs who have used CROSNES grown in both countries are said to prefer the flavor of United States product, perhaps due to the richer soil here (in France they are grown in sand). The BLOOD ORANGE is a hybrid that first appeared in Europe around 1850. Common throughout Italy, Moro is the most desirable variety, and is easily distinguished by the rich burgundy color of its juice. A medium-sized fruit, the Moro has a relatively long, early harvest from December through April. The rind is orange, and will acquire a deep blush as the season progresses. The CARA CARA Navel Orange (also known as the Red or Pink Navel) is probably the result of a cross between Washington and Brazilian Bahia navels, according to Allen Susser's The Great Citrus Book. This picture does not do the fruit justice. The pulp is actually more the color of a ruby grapefruit, not nearly as orange as it looks in here. Attributed to the Hacienda de Cara Cara in Valencia, Venezuela, the CARA CARA's flavor is low acid and sweet, and has more depth and richness than that of the traditional Navel. Well, GOLD KIWI brings a completely different color and flavor (beautiful yellow-gold and a bit of a mango taste with hints of melon) to salads and recipes. It is quite sweet, very juicy. YUZU is a citrus fruit common in Japanese kitchens. The surface of the fruit is uneven, and the peel's fragrance is sweet and slightly bitter. The flavor of the juice is similar to grapefruit but has definite overtones of Mandarin orange. YUZU juice is very fresh and tangy-tasting, and is an important ingredient in ponzu. Traditionally, shreded YUZU peel is used to garnish clear soups and simmered dishes. There are basically two commercially important varieties of persimmons (also known as Kaki fruit), both bright orange in color and Asian in origin. Pointy Hachiyas should be ripened until squishy-soft before eating, but flat, tomato-shaped FUYU PERSIMMONS can be enjoyed crisp like apples. FUYUS are the first persimmon variety to be harvested, the harbinger of the persimmon season and Hachiyas will not be far behind. For eating out of hand, rinse and eat Fuyu persimmons just like an apple, discarding the stem end. For breakfast, slice a firm FUYU PERSIMMON and serve with cream or milk. Generally, FUYU PERSIMMONS are at their best when least tampered with, as their unusual texture and delicate flavor are easily obscured. A ripe Fuyu has the texture of a plum inside, and slices neatly and easily. Halve and glaze quickly under the broiler as a simple main course accompaniment.

Also known as Tree Tomato and Arbol de Tomate, the TAMARILLO is a subtropical fruit generally believed to be native to the Andes of Peru and probably also Chile, Ecuador and Bolivia. It is cultivated and naturalized in Argentina, Brazil, Columbia and Venezuela, and is widely grown in New Zealand as a commercial crop. Each long-stemmed, dangling fruit, borne singly or in clusters of 3 to 12, is smooth and egg-shaped but pointy at both ends. The TAMARILLO is 2 to 4 inches long and 1.5 to 2 inches wide. Skin color is red or gold. While the skin is somewhat tough and unpleasant in flavor, the outer layer of the flesh is slightly firm, succulent and bland, and the pulp surrounding the seed in two lengthwise compartments is soft, juicy, and sweet/tart. The YELLOW TAMARILLO is usually a little sweeter than the RED. The edible seeds are thin, nearly flat, curcular, larger and harder than those of the true tomato. Ripe TAMARILLOS may be merely cut in half lengthwise, sprinkled with sugar and served for eating by scooping out the flesh and pulp. The fruit should not be cut on a wooden or other permeable surface, as the juice will make an indelible stain.

Gold Chanterelles are among the most favored of all the forest mushrooms. Distinguished from Hedge Hog Mushrooms by their prominent gills under every cap, Gold Chanterelles grow on the forest floor. Very visible in the forest especially after a heavy rain this wild mushroom is typified by a very fragrant, woodsy apricot aroma. It is one of the few mushrooms that can be paired with lemon juice or another citric element and not lose its character. Try braising Gold Chanterelles with onions, butter and chopped dried apricot. Otherwise, avoid strong competing flavors such as garlic or spices. Fresh herbs, such as lemon thyme can be used in moderation. Generally, you may cook the stems and caps together. Gold Chanterelles pair well with game or shellfish. Soaking good specimens in vodka for a month yields an interesting essence for sauces.

The exact origin of this amazing fruit is unknown, but is likely from Southern Mexico through Belize, Guatemala, El Salvador and Costa Rica. Cavolo nero (also known as black cabbage, Tuscan kale, Lacinato and dinosaur kale) is a hearty, spicy, long-leaf borecole, so called on account of its extremely dark color. Like its close relative, curly kale, cavolo nero is suitable for serving with hearty, winter dishes. Its hearty flavor and almost sweet aftertaste is enjoyed in winter soups, especially those with potatoes and beans, and as a vegetable, braised or blanched and stir fried with a little garlic and fresh tomato. It tastes best after the first night frosts, which convert its starch into sugar and make it more digestible. The heads, which are actually leaf rosettes, survive freezing temperatures unharmed. The French explorer Samuel de Champlain (1567–1635) found the Sunchoke growing in Indian gardens along the Saint Lawrence seaway and carried specimens of it back to France in 1603. By the late eighteenth century it became a popular vegetable in both Europe and America, though it yielded to the larger potato during the first half of the nineteenth century. The Sunchoke is a lumpy, brown-skinned tuber that resembles gingerroot. A member of the Sunflower family, the "Jerusalem" part of its name is believed to be derived from the Italian word for Sunflower, girasole. Sunchokes can be used in recipes that call for potatoes, and their nutty flavor deserves to be featured. Serve raw in salads or cook in soups, gratins, sautes and purees.

A native of the Japanese island Okinawa, the Okinawa Sweet Potato with its light brown skin and unusual purple flesh is richly nutritious and surprisingly sweet. Scientifically classified as a yam, this root vegetable is a staple among the people of Okinawa and Hawaii, and has surpassed the popularity of the ordinary yam due to the presence of of the antioxidant, polyphenol. VANILLA BEAN prices are falling...please call for quotes! Freshly picked VANILLA BEANS are odorless; the distinctive aroma develops as the beans are dried and fermented. Harvested, before they ripen, from the plant Vanilla planifolia, vanilla pods are then plunged into hot steam at 160F before being left to ferment for up to four weeks. After this time the surface if the fruit will be covered in crystals of glucose and vanilin and the fruits themselves have become black from oxidization but are still flexible. The price on vanilla beans are on a upward trend and are not showing any signs of reversing the trend. In April 2000, a cyclone hit Madagascar (a major growing area) wiping out half of the vanilla bean crop. As a result most of the Vanilla planifolia flowers were destroyed, and Mexico and Tahiti's crops do not have enough volume to make up the difference. Adding to the vanilla crop woes, it takes three year for a vanilla bean to complete its production cycle. Because the crop is so short, growers are picking the beans before their development is complete. As a result, the curing process is not as efficient and quality begins to drop. Like any stone-fruit, the longer vanilla stays on the plant, the more developed the flavor will be. Look for vanilla beans to continue to climb in price.
